Jeeva Bakes – Gluten Free Menu for Bangalore & South India


On October 16th, 2013 when ‘Jeeva’ Bakes had its first commercial Gluten Free sale we never knew we would come this far. Our focus is to provide Indians Gluten Free products which are healthy, tasty and economical and we strive to do that. We have had our share of struggles but we know we are here to stay and we will be announcing and introducing events, more products and other exciting news in the coming months. All orders should be placed 24 hours in advance. If you live in Chennai, Vellore, Trivandrum, Ernakulam, Hyderabad, Kottayam, Coimbatore . Put in a request and we will see if we can courier cookies and cakes to you.

Minimum Order is Rs 500.

Bangalore : Delivery ( Max INR 70 charge) upto 7 km from Indiranagar for October , we will be able to deliver to whole of Bangalore in the coming months

Alternatively pick up at Indiranagar next to ESI Hospital, Double Road, Indiranagar.

Prices may vary if there are any special requests. The prices are fixed and we do not entertain bargaining unless orders exceed INR 2000.

Gluten Free Mini Cheese Buns


Gluten Free Mini Cheese Buns

Ingredients
1 cup Milk or Water
½ cup Butter
2 cups corn starch or potato starch or tapioca starch
2 eggs
1 cup cheddar cheese

* to make it vegan or lactose free. Substitute any vegan butter or oils may work as well.
eggs can be replaced by egg replacer by orgran or substitute 1 tablespoon tapioca or potato starch plus 3 tablespoons water for each egg called for in recipe to help binding.

* amul and milky mist cheese is gluten free – use as per your preferences

* to make it have some more flavour add some dried herbs or chili flakes or any spice you would like. I put a little oregano and mixed herbs . The cheese will take care of the salt part.

Method

1. Bring Milk and Butter to Boil.
2. Take it away from the Heat.
3. With the help of an electric mixer beat in the 2 cups of starch
4. Set it aside to cool
5. Then add in 2 eggs and mix it well.
6. Go on till you get a little soggy dough ball
7. With moist hands roll into balls
8. Either place it on parchment/butter paper or use a muffin pan and put into the slots or you can also use liners.
9. Place it in a pre heated oven. Pre Heat it around 220-200
10. Bake it for 20 – 25 or till the tops are goldenish brown. Temperature – 180-190 degrees.

And yep a quick snack for those lazy Friday evenings or a treat for everyone on the weekend! Happy Foodie Friday:)

Monday Inspiration!

This is true for me! Rome was never built in a day. The happiness and the adventures now didn’t come easily. There were Valley Days where I learnt a lot through pain, through being humiliated because of being Celiac , to being shown the door cos I am a sick employee, to being in Bed for ages, to being highly anxious, stressed and depressed, losing hair and my memory in spurts. But You know what He is in the Business of Restoring and It is all coming back in fact has come back . Could not drive but now I drive 50 km a day if need be and I still bake, cook, do work and manage a house and a business

The Logo for Jeeva, glutenfreeliv.in arose from all these circumstances.

The Circle is about not boxing Life – Its about the Fullness of Life – the circle of Life – Life being Jeeva- Eternal Living Soul is what it means in Sanskrit. Never knew that my Name would be the stepping stone what God has done thus.

The rest is self explanatory.

But this is just to Say – Hope always, Work and Strive towards it, Follow your dreams, believe in them and commit them to God- He will turn them into reality in His time.

Yes, this is why we wanted to start this for people who want to eat economically yummy gluten free stuff and also for building awareness on Celiac and connecting people to take the case forward.

For us its been a wonderful journey arriving at a position where London’s finest Indian Restaurant has asked us to feature in their First Organic Farmer’s Market at Rasa India, Indirangar, Bangalore.

We will be there with Cupcakes, Breads, Quiche and a whole lot of goodies:)

BBC Good Food India and the Economic Times – Investigates Gluten


Jeeva George-Abraham was 26 when her life seemed to spiral out of control. An economic policy researcher with a leading industry organisation, she found herself complaining constantly of stress, fatigue, sleeplessness and, in the worst trough, persistent diarrhoea. “I was running to the loo up to nine times a day,” she says. “I had a history of stomach-related ailments, and had also been treated for irritable bowel syndrome. All my tests were normal but the symptoms just wouldn’t go away.”

Apprehending that work-related stress was aggravating her health condition, Jeeva quit her job in end-2009. An uncle-in-law suggested she see Dr BS Ramakrishna, a renowned gastroenterologist at Christian Medical College, Vellore. He put her through several more tests, including a biopsy of the upper intestine. And finally, Jeeva arrived at an accurate diagnosis: she was suffering from coeliac disease, an extreme form of gluten-intolerance.

Unless of course you’re a Celiac. Jeeva George-Abraham was forced to completely give up gluten when diagnosed with Celiac a few years ago. “I’ve always had a sensitive stomach. Then in 2009, I had a spate of infections, swollen ankles, rashes…” She was consistently misdiagnosed, a result of a lack of awareness of the condition. Next came depression and anxiety so debilitating, she found herself unable to work. “I finally decided to quit my job and find out what was wrong.” She was eventually tested for wheat allergy. “It changed my life.”

Going gluten-free means more than giving up bread and chappatis. “Soya sauce has wheat. Sambar has asafoetida. Cornflakes have malt extract. There was so little information available, so I figured out a lot of things on my own,” says Jeeva. Today, she runs the Facebook page ‘Gluten Free Living in India,’ offering advice and recipes. Like others, she says that the Indian diet, particularly the rice-dependent South Indian one, offers more options for a diet low in gluten.

Chocolate and Almond Cake ( Gluten Free )

INGREDIENTS   Gluten Free

  • 5 eggs
  • 200g butter
  • 200g sugar
  • 200g plain chocolate
  • 200g ground almonds

METHOD

Serves: 12 or Halve the ingredients to serve 6 ( I halved the ingredients)
  1. Melt the chocolate and butter together, then mix in the almonds. Set aside to cool a little.
  2. Seperate 4 of the eggs. Mix 1 whole egg and 4 yolks with the sugar. Blend this with the chocolatey mixture.
  3. Beat the 4 remaining egg whites until they are stiff. Using a metal spoon, carefully fold the eggwhites into the chocolatey mixture.
  4. Pour into a non-stick spring-form baking tin and bake at 175-180 for 45 mins.
